CHICKEN SALAD RECIPE

Per numerous requests, here is the recipe for the delicious Chicken Salad Micheller served at the Club Championship.  Thanks, Micheller!  Enjoy!!!

Ingredients:

NOTE: the curry is optional. I didn't put any in the salad.

  • 2 cups diced cooked chicken breasts (can used canned)
  • 1 cup grapes, cut in half
  • 1/2 cup diced celery
  • 1 cup diced fresh apple
  • 3 -4 tablespoons chopped nuts
  • 1/2 teaspoon curry (optional)
  • 1/2 lemon, juice of
  • 1 cup mayonnaise

Directions:

  1. Place chicken, grapes, celery apple and nuts in a bowl. Mix together mayonnaise, lemon juice and curry and fold into chicken mixture. Serve on a lettuce leaf or on a croissant.
